1/2 cup butter or margarine (softened)
1 cup brown sugar
1 egg
1 cup milk
2 cups flour
1 teaspoon soda
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup nuts (typically pecans)
Mix together, do not over stir! The batter should be lumpy. Bake at 350, until golden brown. Approx 15 minutes -/+ for regular size muffins. Mini muffins 10-12 mins.
Yield: 1 dozen regular muffins
Calorie: 244 per muffin
I remember eating these on Sundays!
My boys like eating them in the buff with a sippie cup of milk.
